Mediterranean Protein Bowl

This is one of my favorite lunches to prepare for myself because it requires minimal effort yet is delicious and healthy! It’s ideal for those who want something filling and nutritious.

  • Ingredients:
  • Baby spinach or any lettuce you would like for the base
  • Rice (In my case I do white but you could do brown, or saffron or anything!)
  • Chicken (I cook it in a skilled on the stove top but you could cook it any way you like your chicken)
  • Meatballs (These are just frozen ones I get in the freezer section but they are so yummy!!)
  • Corn (Also just buy in the freezer section)
  • Tzatziki sauce and Caesar dressing (Specifically, what I use in mine is the Private Selection brand for the tzatziki and the Skinnygirl Caesar dressing)
  • Pita Chips (My go to is the Stacy’s brand!)
